My Struggle with Digestive Distress

In my early 40’s, I developed gluten intolerance after a serious intestinal infection. What a game changer that was. At that time, there were so few gluten-free options in the grocery stores and the ones that were available were terrible tasting and terrible for health. I cringed at the thought of dining out. Few establishments knew that gluten intolerance – and celiac disease – were serious issues for many. When I’d politely ask if a certain dish was gluten-free, I’d receive responses like, “It should be” or “I think so.” Not confidence inspiring. I ate out always worrying if I’d be sick for the next three days.

Finding the Gifts in My Dietary Restrictions

When I began my gluten-free journey, I really started paying attention to all aspects of my diet. I began experimenting with different gluten-free flours when baking and incorporating more – and different – vegetables in my diet. I never knew how yummy artichokes are or how versatile cauliflower is. I found baked goods with almond and coconut flours lower in carbs and much more satisfying that the wheat-based items I used to eat.

And when there was an opportunity for me to teach gluten and diary-free baking and cooking classes for the local community college’s continuing education, I . I’m passionate not just about healthy digestion, but also about spending quality time with friends and loved ones cooking and baking delicious and healthy meals. And when the opportunity to go back to graduate school for my Master’s in Nutrition presented itself, I jumped at the chance. I knew my passion lay in helping people recover from various digestive challenges.

And my focus on also helping those with autoimmune diseases was a natural fit as digestive issues are an underlying part of autoimmunity. And again, balancing lifestyle factors is just as important as what you eat – or don’t eat. In 2021, I added Autoimmune Paleo Certified Coach to my toolkit to further support those struggling with autoimmune symptoms to heal and thrive again.
